Yes, they WILL know. They log your IP address as soon as you update the software for the first time. They will most likely to ignore a few different IP addresses unless the same serial number is used(or abused) too many times.

It's about not registering your software, which you don't have to do. If they track these things, or care about them, is questionable as far as I'm concerned. If they did then Apple's software would never be pirated. And we certainly know that's not true. (Final Cut Pro is one of the most pirated programs out there. At least in my circle of aquaintances.)
