This question is all over the Internet but there are no definite answers. The start of molting is a popular guess. Death is associated with turning white. A popular guess about the connection between turning white and dying is that the molting process did not go to completion. And the guess for why there is failed molting is that there is something missing in the diet. Popular guess of the missing element: iodine.

I was trying to find info on the net about this as well. My emerald is also on the white side, but looks fine and continues to scavenge the rocks. I'm tagging along, but not that concerned. This particular crab has molted several times and his color remains the same.

Iodine, although I don't test for it, I assume is fine in my tank. All my shrimps and the 4 Hulk Emerald Crabs molt often. The 2 little runt Emerald Crabs, not sure why they never got big. They all eat not stop.
