Dump the snails, keep the Xenias. If one of the snails die you'll have a complete meltdown/crash on your hands...

Many folks here use ESV salt - where you mix 4 different ingredients when making the new SW. People like this salt because many don't have to dose as it is well balanced.

If you are more comfortable using salt by the bucket - you can get Instant Oceans or Reef Crystals (lower priced) , but with these you will often have to dose your tank as one is usually low in Ca and the other usually low in Alk.

There are other salts out there that are well balanced but they tend to be more expensive.

Regarding you issues - please STOP using the pH buffer! There should be no reason to use these and when used to make a change in pH they do it too quickly - which is extremely dangerous to a tank.

As for the snails - if you sniff them and they smell bad (really bad, and a smell you won't forget...) they are dead and you should toss them. If they don't smell awful - leave them in your tank.
Leave the Zenia alone unless it turns to total mush - then take it out.

As mentioned above, once you have added Amquell to a tank you will not get an accurate Ammonia reading until ALL of it is out of the tank (through water changes) - which will take months to happen.

Since you have already added the Amquell (don't add any more), what you need to do now are some water changes with a new salt and the tank will stabilize on its own over time. I would suggest 20G per day for about 4 or 5 days if you can..and then 20 G every week.

Please do NOT add any other chemicals to the tank - just do the water changes.

Ontop of what Kathy said try to let your salt water mix for 12-24 hours before adding it into your tank unless your using the ESV salt. All salt mixes take a while to totally dissolve, ESV is near instant. That means you should have 2 buckets of 20g water every day to do daily water changes.

Also, as an FYI, your PH is directly related to your calcium and alkalinity in your tank. 99.9% of the time if you have a PH problem it is usually either your alk or calc thats too high or too low. Adjusting calk and alk to their proper levels will typically balance your PH back to the norm of 7.8-8.2.
