I noticed sometimes that when I turn on the light or even when I reach home at the end of the day that some fish might have a dominant black coloration all over!!! What does that means? Stress? Normal thing? I know that when a fish looses its color, it means she is stressed or uncomfortable. But I have never read about the black coloration. Any help?

Yes, normal. Think of it as their pajamas. Why do they do this? Camouflage, as Anemone says. They don't know your tank doesn't have white-tip reef sharks, they've just gotta do their thang.
