Honestly a lot of reef safe fish/critters are not fully reef safe. I have seen and heard about many different situations. Everything from peppermint shrimp,hermit crabs,some tangs and reef safe angels eating everything from wellso and trachy brains,zoos,acans, etc. Always take caution and observe when putting in new specimens no matter what they are. I don't know if the corals taste really good to them or it's just picking to pick. The first thing I would do is try to feed more. If they aren't hungry odds of them eating other stuff will be less enticing. Think about if you are eating more regular meals you will be less inclined to snack on junk food. So much stuff w/ fish and reefs can be compared to human life..it's kinda just common sense to me. Give that at ry and see what happens. As far as I know pretty much every angel will nip at stuff.

My wife's lemon peel has been nipping at my open brain is it past saving or does it have a chance? If so what should I do (besides removing the angel)?

I really don't think the angel will stop, and I also believe he may start eating other fleshy corals. The angels are nippers and you could go a very long time before they start. If that is the only fleshy coral I would remove it and put it in a very low flow, medium light area (refugium or sump) and let it calm down. If it is not too stressed it should come back. If you have other corals that are fleshy you will have to make a decision on who you like better, the lemonpeel or the corals. I love angelfish (see my avatar) and eventually set up a second FOWLR tank so I could keep them both.
