Barrie what do I do with the cc underneath the rocks and in the rock work that I can't get to?

You shouldn't have much cc under the rocks.
You don't have to get all the cc just as much as practical. The sand will fill the gaps between the cc.

There was just a lengthy post about this.
You should do this as part of a water change. Siphon out the old cc with the water you are removing. The new sand should be rinsed thoroughly and a final rinse in the old saltwater.
The new can be placed in a ziplock bag with a corner cut out. Turn off all pumps and add the sand by submerging the bag and letting the sand fall out of the corner.
Don't move too fast.
