I'm looking to add some more "action" to the tank and I thought a pistol shrimp was a great non-invasive way to add some livestock. Question is, I have two clowns (around an inches a piece now), would the shrimp be a threat to them?

And how would the shrimp fare without a goby?

+1 I have a shrimp and yellow watchman goby that never paired. There are combinations that are more likely to connect but these never bothered with each other.

I put a randalls pistol shrimp with an antenae goby in my sump and they connected within a minute and continue to live together in mutuality. It is really interesting to watch these two and you may want to consider it with a small goby shrimp pair.
