Can I use some Rubbermaid trash containers to cure some dead live rock?

Sure, those would be fine, garbage cans tend to hold their shape well when filled with water/rocks and are easier to keep covered ..to reduce the smell

If you get the Brute cans, they can do double duty to hold your top off or freshly mixed water once the tank is up & running.
