What is ORP

I have a ORP probe for my reef angel controller. What exactly is ORP and what is the importance/significance of it?

oxygen redox potential, do a little research, orp is usually what people read levels off of when using ozone to monitor levels

Trending ORP values can be interesting, but opinion seems to be that it is unnecessary for maintaining an aquarium. There are specific applications of ORP in the waste water treatment industry.

ORP values could become just an unnecessary concern for you. If trending data with little relevance is not exciting, why have another probe to clean, calibrate and periodically replace?

If your running ozone it is. Otherwise its just a measure to track and see if things change. It is an indicator of how much oxygen could be in the water, but its just an indicator.
