I was in Minnesota this week and went to the state aquarium. During a behind the scene tour I saw this:
The trays on the bottom have a mesh screen, once the water is filleted out, the 'cakes' go into the refrigerator. When they harden, someone removes them with a spatula.
Not complicated at all, just massive.
Guy in the kitchen told me its about 6 months worth of salt and baking soda.
