Perhaps you should give us a bit more info -
What did you use to start the cycle? (fish, dead shrimp, etc...) If there was not much to "pollute" the tank, then one would not expect to have a high ammonia/um or nitrite reading at this time. If/when you add any coral, clam, or fish, and you feed them, a "new" cycle will start - in a mature tank this is usually quite small, and is not really noticeable.
When do you measure the pH? (morning or night). Once you have algae, corals or clams in the tank, the pH increase after ~ 8-10 hours of MH can be quite high. If you're already dosing "a cap full of vinegar" to keep the pH from going too high, you're bound to have problems later on...
Some comments, if I may...
The vinegar adds carbon to the system, and will cause an increase in diatom growth over the long-term. If you have enough snails, and benthic animals, that's not necessarily a bad thing (food for them...)
The calcium level sounds unnaturally high. If it really is that high (Ca test kits are all quite inaccurate), you're risking a Ca precipitation, which will drastically lower the Ca level.
IMHO, your tank is NOT cycled, or stable enough for *any* coral at this stage - don't rush it. Wait at least 3 months before introducing any SPS or clam (6 months is even better...)
