I bought a Harlequin Shrimp a few days ago and today i went and bought a choc-chip starfish for him to eat and it seems like he is haveing trouble trying to flip him over and eat. The star is only a lil bit bigger then a quarter. What are some other kind of stars they like to eat?

Don't worry the shrimp don't just gobble up the whole star at once, it may take up to a month for the whole star to be consumed.
To answer your question though they feed primarily on the Linckia and Nardoa species of stars and have been reported to eat Acanthaster planci.

Yes, as long at a gut portion of the starfish is intact the starfish can survive and actually regenerate.
