If you just moved everything from the 55 to the 100, you don't need to add any clean up crew, except maybe some more snails to clean the added glass. Then just add a variety of snails as you go. Maybe a fighting conch or two to help clean the sand bed. And maybe a tiger tail or other sand eating/cleaning cuke.
I wouldn't add one of those package deals all at once unless you can't buy them at you LFS.
