What is the difference (and how can you tell) between true and false perculas? Do either prefer a certain type of anemone?

I have had a false for about 2 years. This is one of my favorite fish.

I did a search on the forum and found
Some say the "eyes" have it. Perculas quite often have have a pure bright orange iris around the black pupil. This often gives them the illusion of having smaller eyes, or a beady little eyed look, as some say. Ocellaris clowns more often have a grayish orange iris which gives them the illusion of a larger looking eye than some percula clownfish. But, this sign isn't always reliable. Percula clownfish more often than not have more black coloration on their bodies than the similar looking ocellaris clownfish. This includes wider black margins which divide the orange and white markings. Ocellaris clownfish usually have thin black dividing margins between the orange and white. This overall darker coloration of the percula is recognized by most hobbyists as the most recognizable difference between these two fish.

Check some of the sites that advertise on this site that sell livestock. Check clownfish and there will be percula and true percula. The trues have thick black patches that make them different. The two in your pic are regular perculas. They'll find that anenome no problem and be happy with it. Which you probably already know because they're playing in it by now. Be sure to take care of the anenome with proper lighting and food which your pet shop should have already instructed you about.
