If I get a pump the does about 1200gph and it says 1" outake and intake, is there anything wrong with using 1.5"intake and 1.25" outake, then reducing when I get to the pump? I would think it would only put less strain on the pump but wanted to double check.

You are correct. A bigger pipe size on the intake helps reduce the losses on the suction side.

It would not hurt. Pumps are designed to overcome some pressure on the output side. Any time you increase the area the flow passes through you reduce the losses. The flow/friction component varies as the velosity squared. So a little extra flow area goes a long way.
