I have this brown slime that covers my sand (in places that flow is not great) and I'm thinking a cuke may take care of it. My tank is a 30 long, so I'm wondering if this is enough room for a cuke. BTW I have also had a sand sifting star int the tank for a couple of years, should I remove the star for some time before adding the cuke. I've read that sand sifting stars eat everything in a sand bed.

That's plenty of room for a cuke or one or two Tongan fighting conches. I'd remove the star. It might be a reason you're seeing slime, actually. While they turn over the sand, it is true they also eat everything that's in it ... some of which could help reduce dino/cyano. They won't eat cukes or anything large like that though.
