The smaller the bubbles are in a skimmer, the more efficient it is. You only get wet skimmate because the overflow height is too short. By increasing the distance the skimmate must travel before it overflows into the collection cup, more moisture is removed via gravity, producing more concentrated (drier) skimmate in the collection cup.
