Any organic compound can theoretically reduce nitrate, by making bacteria to grow and take up nitrogen (from nitrate) as it reproduce. Vitamin C, Volka (ethanol), red wine, cane sugar (surcose), high frutose corn syrip, etc., anything that burns will works. The issue with viamin is that there is nitrogen in it, so it may not be working as well as the plain carbohydrate.
