Not to worry, as the others said, they do grow back.
My CBS lost his when I was moving him to redo the rockwork in his tank. At times it is a defensive move..they literally 'eject' their arms to be left behind (and hopefully satisfy the attacker) while the rest of the shrimp escapes whatever is attacking it. In my case it was me:arg:

I watched my CBS like a hawk to see hiw they would grow back...every day..nothing..for about 2 weeks. Then I noticed he was slightly wider than usual (as he is shortly before he molts)..but still could not see any new 'arms.
The following day - there he was fully intact..all arms and legs accounted for. Still stying to figure out why they weren't remotely noticable the night before.
Amazing animals we have here! :)

You should also find out if something is causing it to loose its arms, it is possible it got into a fight with one of its tank mates.

Make sure there isn't a deficiency in your tank causing him to loose his pincers. I bought my CBS from Petco sans arms & they grew when he molted. I supplement iodine to ensure he, my other shrimp & my purple reef lobster can molt properly & make sure they get enough to eat.

I use kent. Have used seachem in the past, the important thing is to buy a test kit and make sure you get your iodine levels right.

i would say it was stressedd by something else in the tank. if there stressed and you touch there claws they actually come off quite easily or lack of food for a decent perdiod of time ( i notice if my CB is hungry for a decent period of time his anteners get short( i bought a few skimmer and now feed my tank quite well), vitamens..ect
