I dont believe they all eat other shrimp.
The Pistol Shrimp can be easily confused with Mantis Shrimp if judged by sound only. Unlike the Mantis Shrimp, it is not harmful and will not pose any threat in the tank, with the possible exception of smaller shrimp.

Hmmm... I seem to remember learning that both pistol shrimp as well as mantis shrimp are not exactly the kind of critters we "choose" to bring into our systems.

Yeah there are many, many locations on Earth where you can find temps "as hot as the sun" and we're all still here. The key is that they are contained, often within magnetic fields.
Now I'm no nuclear physicist but I would guess that if the pistol shrimp had the ability to move so fast as to super heat water to a temp hotter than the sun, if even for a trillionth of second, there would be some steam involved.
