Yet another evening staring into the fridge hoping to find something that was different..and then it hit me...soft boiled eggs...swimming in melted butter.
Must be 15 years since I last had them. My Mom used to eat them every now and then when I was young.

lol...ok, so I left out the part about them looking like a bowl of vomit, but if you ignore that part, they're pretty good.
Of course, I probably won't eat them for another 15 years..but tonight they hit the spot!

I think it's stand a raw egg on it's point it's easy and does work on the first day of spring. Also soft boiled eggs are yummy.

I just wing it.
If they cook too long you can make egg salad instead
I left the water on when I cracked the first one open..it if was too hard, I would have started again..lol

Get yourself an eggtimer. Got mine at bed bath and beyond for like 3 bucks. You drop it in with the eggs and it changes color as it boils. Makes perfect soft boiled eggs everytime. .. mmmmmm. yummy.

It's weird. I like soft fried eggs but soft boiled eggs freak me out a little.

It was only a couple of eggs...didn't take much butter for them to be swimming Plus I only eat eggs a few times a year..that said..knock wood !
