What is the difference in between the matrix, spot, center weighted, and spot auto focus area?

What about AE Lock where would this be used?

All my pictures keep coming up with the subject out of focus and the background in focus, why?

Matrix metering differs from one manufacturer to another but the principle is to take samples of a large segment of the view and use an algorithm to determine what the best fit metering is. It's the most advanced (note: not necessarily the best) metering and usually only found on SLRs.

Spot metering is determining proper meter via a very tiny "spot" (wherever the focus is, usually under 10% of total view area). It disregards the rest of the information in the view. I used this metering for my jellyfish shots.

Center weighted analzyes the who view but gives importance to the area in the center of the view when determining the proper meter. This is the most common metering amongst consumer cameras.

I'm not exactly sure what spot auto-focus area means.

AE lock is Auto Exposure lock. It locks in the previous exposure setting and uses this metering for all subsequent photos until you release the lock. This is useful for panoramas and other stitched photos.

As for your photos, I'd venture a guess that your focus point is targeting the background and not the foreground subject. In the viewfinder, is the subject in focus or is the background? Hopefully, it's not a focusing defect that sometimes shows up in some cameras (Canons more so then other brands). If it's a backfocusing defect, you will need to get it serviced.

It looks focused in the view finder, then on screen appears slightly blurry. Its a Nikon 8700 and is probably just me using some of the wrong modes.

Thanks a lot for the explanation on the metering modes, now I get it.

here's an example of the blur. In the picture the clowns face is blurry but the clots branch behind the head is focused. I'll have to play around some more with the focus on this camera.
