I would suggest increasing your shutter speed and using a faster lens. You will have to open the aperture up more to account for the added shutter speed. You might also try using a tripod and cable release or the self timer on the camera.

I would also get in the habit of training your fish to pose. You can work with them by presenting them with special treats for holding their pose. This will take some time and patience. It is well worth it in the end as you will have sharp detailed in focus portraists of your fish. If this doesn't work use frozen dead fish and position them with fishing line. You can photoshop out the line if is shows up.....in post processing.

To steady your shutter release finger I might also suggest a couple rum and cokes prior to shooting. This always relaxes the muscles in the body and the photographers nerves.
