Yesterday I noticed my zoanthids doing something that "looked" to me like they were defecating. Multiple ones were doing it at the same time. They would begin to close then out of the center of each a brown string would be ejected from the center opening. Afterwards they would then open up. This is a new colony for my tank, less then a week old. I do not have a powerhead pointing right at them, but the flow is enough that some of the outer branches are swaying slightly. The only other times I see them close is when I turn off the lights for the night. Is this an indication of water flow or water quality issue? Or is it a normal thing?

It could just be them acclemating to the lighting you have, sometimes corals will give up their sybiotic algae in a response to higher lighting than they are use to or came from. They are probably all right it is a normal response.
