I have a Reef Devil Deluxe skimmer with a Catalina 1800 pump that runs it. It has a flow rate of 700gph. My question is can I plumb the UV sterilizer into it or will it detract from the skimmer to much.
Also it is time for some update pics my tank is looking really good, except for the outbreak of ich i had

The flow rate will decrease, depends on how the UV is constructed. You can try, and see if the skimmer still performs adquately, and switch back if not. Good luck.

read up on the UV, I believe that is too much flow for results, I have not run mine for over a year, but if I remember right it had a max of 150gph and less depending on what you are targeting to kill.

yeah, for UV, you want to do as slow as you can, since going past the UV too quickly will do nothing.

One option is to put the UV in paralle with a bypass path. Majority of the water till bypass the UV to the skimmer, while some of the water go thru the UV to the skimmer. A valve on the side of the UV is used to control the ratio.

If you like plumbing work, this sounds like a good option if the pump can run the skimmer.
