I just did my Nitrite, Ammonia, pH, etc, and its not looking good. This is day two of tank with live rock and live sand (seven lbs of live rock, 6 gallon tank). My Nitrite is less than 0.3ppm; pH 7.9; Ammonia 5.0ppm (!!!) I knew values were supposed to be high, but is it supposed to be this high? Is my live rock now dead rock?

Just calm down now. :D Ammonia and nitrite will both spike yet, and every tank is different with regard to timing.

Nowadays I don't even do tests for at least 2 weeks, and I don't even own an ammonia test kit. I just let it go for a few weeks and test for nitrites when I think it's ready.

If that ammonia reading is accurate, that is VERY high and I would expect that you've killed some stuff off at this point. Personally I would be doing a large water change ASAP - especially considering how easy that will be to do on a little tank like this...
