My current Apex display is causing my whole Apex to crash when plugged in... Anyone else have this issue?

Go the fire tablet route, the wire the display uses is beyond fragile; both my displays have frayed wires that either short or cause the displays to fail. There's an app for Android that will leave the display turned on when plugged in.

I need something connected directly to the Apex without internet.

You only need the Internet for the Apex fusion site, from the tablet you can access the Apex built in website just as you would from a desktop.
