So What actually causes canisters filters to become nitrate factories?

For example, I have an EHEIM Pro II, but my nitrates are high.

Is it the bio, mechanical, or the filter pads?

I can take it offline, but then it'll just be sitting it there. What else can I use it for?

the organic matter gets caught in the filter and decays. Eventually it turns into nitrates.

You can use your filter for carbon, for once-in-a-while polishing, or for circulation.

Also remember that with any canister filter that if you have the power turned off on it for 1 hour or longer, you must dump the contents of the canister, rinse it out & then refill it.
In that period of time all bacteria in the canister will die due to the lack of oxygen.
